Bacon not only makes everything better, but it is godsent. These bacon-wrapped jalapeno sensations are proof that heaven can’t be too far away!

Ingredients

1 to 2 packages cream cheese, room temperature

2 cloves chopped garlic

1/4 cup finely chopped sun-dried tomatoes

Chopped fresh basil leaves

Pinch salt

10 to 25 jalapeno peppers (larger than average size will make them easier to stuff)

1/2 to 1 pound thinly sliced bacon

Directions

Preheat the oven at 425 degrees.

Combine the cream cheese, garlic, sun-dried tomatoes, basil, and salt in a medium-sized bowl. Mix the ingredients until the mixture is soft and manageable.

Slice the jalapenos in half and de-vine/remove the seeds from each pepper.

Fill a pastry bag (or sandwich bag with a corner-cut) with the cream cheese filling. Sqeeze the filling into each jalapeno-half and wrap the pepper with 1 strip of bacon. Place the jalapenos on an ungreased cookie sheet and bake for about 20-30 minutes or until bacon is brown and crisp.

Now…Serve and enjoy!

Here’s another great guacamole recipe to start the party off right! Holla!

Ingredients:

3 Haas avocados, halved, seeded and peeled

1 lime, juiced

1/2 teaspoon kosher salt

1/2 teaspoon ground cumin

1/2 teaspoon cayenne

1/2 medium onion, diced

2 Roma tomatoes, seeded and diced (the chuckier, the better)

1 tablespoon chopped cilantro (If you are a cilantro hater, it is ok- you don’t really need it)

1 clove garlic, minced

Directions:

In a large bowl place the scooped avocado pulp and lime juice, toss to coat. Drain, and reserve the lime juice, after all of the avocados have been coated. Using a potato masher add the salt, cumin, and cayenne and mash. Then, fold in the onions, tomatoes, cilantro, and garlic. Add 1 tablespoon of the reserved lime juice. Let sit at room temperature for 1 hour and then serve.

My mom belly has been a little out of control lately. Yes, too much beer and wine. So, I decided to break down and buy the Flat Belly Diet magazine at the supermarket the other day. Now, I am not a ‘fade diet’ kinda girl, but the recipes are fresh and made with some of my favorite foods: avocados, nuts, olives, and dark chocolate.

I made my first Flat Belly meal last night after a manic Monday at work, scallops with avocado kiwi salsa. Now, the scallops were just that- scallops. I’ve come to the conclusion that I really don’t love scallops. I just ‘kinda’ like them. But, the heat of the peppers and crisp healthy bites of the salsa made me feel like I was enjoying my meal along the Mediterranean Sea.

I could feel the breeze off the water as I watched the grinning fishermen raise their catch of the day up in the air after a successful day out at sea. Aahh…freshness…

Needless to say, the fruit and vegetables fused perfectly and created a summer side dish that can be enjoyed with any seafood or poultry dish.

Ingredients:
1 avocado, diced (not too fine)

2 kiwifruit, peeled and finely chopped

1⁄4 cup finely chopped red onion(we used a vidalia onion)

1⁄4 cup finely chopped red bell pepper

2 tablespoons chopped fresh cilantro (we had it without- my husband is not a fan)

1 jalapeño pepper, seeded and finely chopped

1 tablespoon freshly squeezed lemon juice

1⁄4 teaspoon salt

1⁄8 teaspoon freshly ground black pepper

Combine the avocado, kiwi, onion, bell pepper, cilantro, jalapeño pepper, lemon juice, salt, and black pepper in a bowl. Now, enjoy!

Don’t get me wrong, I love a good steak, but sometimes you need a break from red meat. Last night, we put our Weber grill to work and made some yummy- to- your- tummy Portobello Burgers. Juicy, hot, and tangy, every bite was followed by my eyes rolling to the back of my head. A sign of a perfect burger!

2 tablespoons brown spicy mustard

3 tablespoons balsamic vinegar

1/2 cup olive oil

1 teaspoon kosher salt

1/2 teaspoon freshly ground black pepper

1 teaspoon hot sauce

4 portobello mushroom caps

4 slices Gouda cheese

1/2 cup mayonnaise

4 hamburger buns

1 red onion, sliced

4 leaves butter lettuce

1 tomato, sliced

Combine marinade ingredients. Place caps into a baking dish and pour marinade over top. Use a brush to make sure all caps are covered with the marinade. Set aside and let marinate up to 2 hours.

Remove the portobellos from marinade (do not discard marinade) and place gill side down on a preheated gas, electric or charcoal grill over medium-high heat. Grill 3 to 4 minutes per side. Top each cap with cheese 2 minutes to melt before they are finished grilling.

In a medium bowl combine 1/2 cup mayonnaise and 2 tablespoons of the marinade.

Spread the flavored mayonnaise onto each bun and top with portobellos. Serve with sliced onion, lettuce and tomato.

Summer is here! And yes, my body is not ready for a bikini thanks to beer! Oh well! I guess all I can do is grab a frosty mug and think about which beer I would like to enjoy first!

Let’s see…

The first beer that comes to mind is Amstel Light. It is one dam good bier! It is low in calories and can be enjoyed throughout the day! Its lightness allows you drink… and drink… and drink until you can’t drink anymore! It can be enjoyed with a variety of food; however, I personally like to drink it while munching on delicious Gouda cheese and crackers! It is so good! You’ll love it, I swear!

What else is there?

Another beer I enjoy drinking in the summer is Bell’s Oberon. It is a summer classic in Detroit (and the rest of Michigan) that can be found at almost any local bar or pub. Try it for lunch with a delicious smoked ham and Edam cheese sandwich. Or simply enjoy it with a slice of orange on a hot summer day! But beware, it isn’t as light as Amstel Light since it is a wheat ale, so after a few beers you should be feeling a little lightheaded.

I guess those are my two top picks for the summer so far… We did buy a bunch of beer the other day to taste test, so stay tuned for my reviews! With the rate my husband and I drink, we should be able to review at least 2 more new beers by next week!

So, until then, Cheers!
